Ingredients:
3/4 Cup Sugar
1 Cup Shortening or butter
1 egg
2-1/2 Cups flour
1-1/2 teaspoon Baking Soda (not powder)
1 teaspoon Almond Extract
2 tespoons malted milk (optional)In a large bowl, cream the shortening,sugar and egg. Add the almond extract. In a second bowl, combine all of the dry ingredients. Gradually add the dry ingredient into the first bowl and mix until completely blended by hand. Do not use any mechanical mixer or over mix by hand. Refrigerate the dough for 30 minutes or more.Roll dough into 1 inch balls and press flat. Brush with beaten egg and place and almond on the top. Make about 40 cookies. Bake 12-14 minutes at 375.
Fish Sauce (Nuoc Cham)
3 tbsp. warm water
3 tbsp. sugar
3 tbsp. lime juice or rice vinegar
4 tbsp. fish sauce
1 clove garlic, finely chopped
1-2 tsp. chili flakes or chopped chilli peppers1/4 lb. rice noodles, boiled and rinsed
2 cups bean sprouts
1 small cucumber, sliced
1 head lettuce, chopped or shredded
Chopped mint leaves
2 cups carrots, slivered and soaked in Seasoned Rice Wine Vinegar
1 cups green onions, chopped
Crushed peanuts
Ingredients:
8 cups Cooked Steam Rice
1/2 cup of chopped Ham or Spam
4 strips of Bacon or 2 Chinese Sausage
1 cup of Frozen Peas or Mix Vegitables
2 Eggs
2 tablespoon Oyster Sauce
2 tablespoon Soy Sauce
2 stalks Green Onions
2 cloves garlic, minced
1/4 white onion, finely chopped
White Pepper
Sesame OilMake 4 servicings:
Mix Oyster Sauce and Soy into a bowl. If rice is from night before, soft rice with this mixture.
Use large skillet or wok, add 2 tablespoons of oil. Saute the chopped bacon, ham, garlic and onion for 3-4 minutes. Add rice a rice and sauce mixture and cook until everything is coated evenly. Add frozen peas and cook for about 5 minuites.
Before serving, make a well in the center of the skillet, and add 2 beaten eggs. Stir egg until is it scambled before mixing with the rest of the rice.
Finish off with some chopped green onion, white pepper and a few splashes of sesame oil.
Ingredients:
2 packages Oriental Flavor Top Ramen
1 cup of chop chicken breast or any left over meat
1/2 cup of Frozen Peas or Mix Vegitables
1/2 bell pepper, chopped
1/2 cup mushroom, chopped
1 stalk celery
1 tablespoon Oyster Sauce
2 tablespoon Soy Sauce
2 stalks Green Onions
2 cloves garlic, minced
1/4 white onion, finely chopped
White Pepper
Sesame OilOpen 2 packages of Oriental Flavor Top Ramen and remove flavor packets. Cook Ramen normally and 1 flavor packet in boiling water and drain. Sauté celery, green pepper and onions for 2 minutes. Add cooked left over meat. Add soy, oyster sauce and stir fry.
Finish off with green onion, white pepper and sesame oil. Toss gently and serve immediately. Now that's a winning taste!

1 package siu mai wrapper
1 egg egg beaten
1 can chicken broth
Pork & Rice Filling
1 lb. ground pork
1 teaspoon salt
½ cup chopped water chestnuts
2 tablespoons cornstarch
¼ cup chicken stock
2 teaspoon soy sauce
2 teaspoon sugar
Chicken & Rice Filling
1 lb. ½ white and dark meat (chopped)
½ cup Napa cabbage (chopped fine)
1 teaspoon salt
2 tablespoons cornstarch
¼ cup chicken stock
2 teaspoon soy sauce
2 teaspoon sugar
Rice Filling
Cook 1 cup of sweet (Glutinous) rice and ½ cup short grain rice. Cook rice mixture in chicken broth.
Mix meat filling together. Brush beaten egg inside of siu mai wrapper. Place 1 tablespoon rice mixture on bottom, next put 1 tablespoon of either pork or chicken filling. Add any chopped meat on top. Steam for 10 minutes.

Curry Pork Filling: Cut meat into very small pieces or mince, then stir fry in medium heat for 3 minutes Try to equal the portions of meat Stir-fry the meat: • ½ lb. Ground Chicken, Beef or Pork or combination • 2 pieces - Chinese sausages - minced or chopped • 3 strips of cooked bacon - minced or chopped • 1/2 cup Ham - minced or chopped Mix the following: • 1 cup chopped onions • 1 cup red potato - boiled and mashed • 1 tablespoon or more of yellow curry powder to above mixture • ½ cup of chicken broth Add the following for taste: • oyster sauce - 1 tablespoon • sugar – 1 teaspoon • 2 tablespoon cream of chicken soup Add to meat mixture in stir-fry pan and adjust taste to your liking.
Use medium heat to heat up for 2 minutes' Then add cornstarch to thicken. • cornstarch - 1 tablespoon - moisten with a little water Remove and cool. Store filling in refrigerator until dough is ready.
TURNOVER DOUGH
Ingredients for dough: 2 cups all purpose flour ½ cup Crisco shortening or canola oil ½ cup water 1/2 egg yolk ¼ teaspoon baking power ¼ teaspoon lemon juice ½ teaspoon sugar
Use a wooden spoon to mix flour and shortening together in a bowl. When slightly blended, use a pastry cutter to gently cut into the mixture. Add water and blen with a pastry cutter until water is absorbed. Take dough out of bowl and place on top of lightly floured board. Flatten dough slightly. With a rolling pin, gently roll dough in one direction until it about 1/8" thick. Divide into 2 hales. Roll on have out to about 12" X 7". Brush Crisco or butter the top of one half. Use hands to roll upward into a long roll. Use a knife to divide
Ingredients:

1 tablespoon worcestershire
1 tablespoon soy sauce
1 teaspoon onion power
1/2 teaspoon salt
1/2 teaspoon black pepper

16 oz can, Embasa Crushed Tomatillos
1 medium onion, chopped
1 large jalapeno peppers
2 cloves garlic
1/4 cup of chopped cilantro leaves
2 cups of water
In a sauce pan, saute the onions . Add the tomatillos sauce, water and garlic and cook for 8 minutes.
Turn down heat and let simmer for 20 minutes.
1 pound lean ground beef
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon chilli powder
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
2/3 cup water
1. Brown the ground beef in a skillet over medium high heat, using a wooden spoon or spatula to separate the beef into while cooking
2. Tilt the pan and let the fat drain for 5minutes.
4. Add chili powder, salt, dried minced onion, paprika, onion powder, garlic powder, and water, simmer for 10 minutes.
